toss
shredded raw beets (3 medium sized beets)
blanched beet greens
candied pecans
with
olive oil
white balsalmic vinegar
crushed raspberries from your backyard (optional)
salt and pepper
top with
crumbled goat cheese
another yum summer salad, which we ate with the fava bean scramble, but this also didn’t yield great pictures… I made the mistake of adding goat cheese prior to tossing the salad and although it was delicious, it was a disconcerting magenta. So, lesson learned, add goat cheese last.
